It is based on homemade buckwheat wine, blended with elderflower and honey, giving it a slightly heavier taste with a balance of sour and sweet.

The name is taken from the theme song of "Kiki's Delivery Service" by Joe Hisaishi, symbolizing a new beginning and the pursuit of freedom.

This drink is inspired by Japan’s traditional New Year’s soba celebration on December 31st. Buckwheat noodles are easy to break, symbolizing breaking away from the past and welcoming a new beginning.

A Huge Tree In The Tsukamori Forest

Tsukamori's Big Tree is a piece of music composed by Hisaishi Joe for "My Neighbor Totoro", describing a secluded place far away from the hustle and bustle and full of natural atmosphere. In order to reflect its calmness and harmony, this concoction is based on matcha from the tea ceremony, supplemented by pear and bubbles, presenting a light and tranquil beauty.

This is not only a cup of cocktails, but also a portrayal of a free-spirited character. In 1958, a cocktail created by Keiichi Iyama of Sakata City, Yamagata Prefecture, won the Suntory competition. On May 10, 2021, the outstanding bartender Mr. Jingshan passed away. This day happened to be the day when we determined the store location. In order to commemorate this special fate, we have permanently included the classic cocktail "Snow Country" in the menu to express our respect for Mr. Jingshan and the cherishment of this fate.
